The Most Important Meal of the Day

Wow.  It’s been a while.  And I swear, I keep trying to get back into this whole blogging thing, but I keep writing these gargantuan posts about HUGE ideas, that surprisingly, go nowhere.  I’ll keep them in the works, but man, it’s been getting a little heavy up in here.

So I thought, maybe it’s time for a little mindless fun.

Here, in our neck of the woods, winter is going down with a fight.  Don’t get me wrong, I love winter.  I really do.  But come mid-March, the idea of trading in snowsuits for sunscreen actually makes me salivate.  Picture yourself.  You’re on your knees, stuffed into the small space by your door leading outside.  The gateway between the infernal stuffiness of the indoors, and a massive, unconfined space. You have three excited, small children falling all over each other with one goal in mind: Doorsmosis.  One is holding your hair for support.  The other opens the door and lets the indoor cat, out.  Another has just decided this would be a great time to pee.  An unidentified foot is asking you to put it’s appropriate outdoor covering on it, while a snotty hand mistakes your face for a great resting spot.  Now, in that state, what looks more appealing to you, in terms of preparation to vacate the premises?

Chicken à la Kid

Yeah…so I had one of those nights where you look through the cupboards and the fridge, and nothing seems to go together.  I found some frozen chicken breasts, some crusts of bread and some cheese, and not much else.  FYI: If Child Protective Services calls, there were also plenty of fresh veggies in there.

Apparently, I also found a little inspiration in those cupboards, and I made something.  I can’t say for sure how good it was, but I can say this.  Three kids…all three…even the picky one…ate it all.  And they didn’t complain.  One even said, “Mmmm…can we have this every night?”  Yeah, if that’s not a working-in-your-favour-testimony, I don’t know what is.

Here’s a picture of what I’m talking about.  Also, I did find some strawberries at the last minute (or I have outstanding Photoshopping skills?).

Hakuna Matata Frittata

We’ve had a rough couple of days (teething-baby/sick-kids/sick-husband type days) here at the Banks’ residence, and I have NOT been inspired to come up with any great dinners.  Pouring sauce onto noodles from a jar has been the peak of my creativity.

Tonight I was so tired, I thought I’d make something easy, and you know what?  It was damn delicious…so I have decided to share it with you.

I call it the Hakuna Matata Frittata.  Why?  It means “no worries.”  Well, I guess it means, “no worries frittata.”  God, what are you a fricking grade-ten English teacher?  Stop judging me!  Here’s a picture to convince you it’s worth reading through this ridiculous babble to find the recipe.
